One of the most frequent reasons (excuses!) I hear for not eating better, is a lack of time and knowledge. This is the problem I aim to solve in my forthcoming book, 51 EASY CLEAN RECIPES. Here's an example of a simple and tasty recipe you can make and enjoy:

Prep time: 10 minutes

Cook time: 15 minutes

Yields 4 servings


·      8 corn tortillas

·      1 lime

·      1 pound chicken, cut into thin strips

·      1 tsp chili powder

·      ½ tsp cumin

·      ½ tsp oregano

·      ½ tsp salt

·      ¼ tsp black pepper

·      1/8 tsp garlic powder

·      1/8 tsp onion powder

·      2 Tsp olive oil



Prepare the pan by coating it with the olive oil. Begin cooking the chicken under medium heat. Combine the dry spices and add them to the chicken. Stir the chicken frequently until it has thoroughly cooked.

Squeeze the juice of one lime on the chicken and serve on the corn tortillas.

Add chopped onion, green or red bell peppers, tomatoes, cucumber, cilantro and cheese, if desired, and enjoy.
